Gli scones perfetti / Perfect scones

Pensieri di mamma e cuore gonfio.
Quando non si sa dove porta la strada e il cammino sembra costare troppa fatica.
Quando la nebbia è una condizione dell'anima e l'estate alleggerisce solo i vestiti.

Come fare a trovare sollievo?
Dove volgere lo sguardo per cercare il fiato che serve, la lucidità, e tutto il resto?
Bisognerebbe sapere a Chi fare le domande giuste, quando servono.

Preparo la colazione, nel frattempo.
Che non è una risposta, ma un palliativo.
Il migliore che conosco. 


500 g farina auto lievitante
2 cucchiaini lievito chimico
2 g sale
80 g zucchero semolato fino
150 g burro
250 g latte intero freddo
30 g latte intero

Nella ciotola della planetaria con lo scudo miscelare appena la farina, il lievito, il sale, lo zucchero e il burro freddo a pezzi, finché l'impasto si compatti un po'. Aggiungere il latte e mescolare ancora, il minimo indispensabile perché l'impasto risulti legato ma non appiccicoso.
Trasferire sul piano di lavoro infarinato, stendere in un rettangolo e dare all'impasto una piega da tre. Fare riposare in frigorifero.
Stendere l'impasto ad un'altezza di 2.5 cm, tagliare gli scones con un cerchio da 6 cm, trasferirli su una teglia coperta di carta forno e cuocere in forno a 200° C per 12-15 min circa, fino a colorazione.
Fare freddare su una gratella e servire tiepidi con clotted cream e confettura di frutta.

500 g self-raising flour
2 tsp baking powder
2 g sea salt
80 g caster sugar
150 g unsalted butter  
250 g whole milk, cold
30 g whole milk


In a stand mixer combine flour, baking powder, salt, sugar and cold butter and mix on medium speed until the batter holds together. Add milk and knead dough until just coming together (it should not be sticky). Tip out onto a lightly-floured surface, bring the dough together into a rectangular form, roll it out and fold it into thirds like a letter: take a short end and fold it over the center, then repeat with the other end. Let it rest into the fridge.

Roll dough out to 2.5 cm thickness, cut out scones with a 6 cm ring and place on a tray lined with baking paper. Brush with a little milk for a shiny glazed finish.
Bake for 12-15 minutes (200°C) until risen and golden. Transfer scones to a wire rack, leave them to cool slightly and serve warm with clotted cream and fruit jam.

Biscotti di Pasqua /Easter cookies

La prima volta che compro casa.
Dopo averla cercata, immaginata e sperata, adesso è qui, ad una firma da me.

Dai miei spazi bianchi e dal profumo di pane.
Dai libri e la dispensa sempre piena.
Dai cassetti in ordine e tutte le piante.

Grande, luminosa e con un nome che porta fortuna.
Vittoriana come la mia mamma.
E piena di bambini.
Che casa sia.


100 g zucchero a velo
200 g burro freddo
370 g farina debole
1 uovo medio
2 g sale
i semi di ½ baccello di vaniglia

Nella ciotola della planetaria unire il tutti gli ingredienti e mescolare con la foglia. Formare un panetto con la pasta, avvolgerlo nella pellicola trasparente e farlo riposare in frigorifero. 
Stendere la pasta sucrée ad un’altezza di 5 mm e ricavare i biscotti con l’aiuto dello stampo a forma di coniglietto. Disporre i biscotti su una teglia coperta di carta da forno e farli freddare in frigorifero per mezz’ora ca. 
Infornare i biscotti a 170° C fino a doratura (ca 10-12 min), farli freddare su una gratella e terminarli con una pastiglia di cioccolato bianco come codino.

100 g icing sugar
200 g unsalted butter, cold
370 g plain flour
1 free range medium egg
2 g sea salt
½ vanilla pod seeds

Into the bowl of a stand mixer, mix all the ingredients, then leave the pastry cool in the refrigerator.
Roll out the pastry to a height of 5 mm, cut out the cookies and leave them to rest cool in the refrigerator for at least half an hour. 
Bake the cookies at 170° C until color, for 10-12 min approx. Place the cookies on a wire track to cool them and complete with adding white chocolate buttons like tails.

Biscotti al cioccolato e fior di sale / Chocolate cookies with salt flakes

Ci sono delle rime che mi tengono compagnia da anni.
Sono di Fernando Pessoa e recitano così:

Voglio, avrò –
se non qui,
in altro luogo che ancora non so.
Niente ho perduto.
Tutto sarò.

Sono le liriche di quando tutto gira in direzione ostinata e contraria.                   
Le parole dei momenti bui, gli inni del conforto.
Le ho ripetute con tenacia un numero infinito di volte, come un mantra.

Ma adesso è tempo di lasciarle andare.
Non perché abbia messo in atto il potenziale che spero.
Piuttosto perché, in termini di averi e desideri, è tutto già tanto davvero.


100 g cioccolato fondente al 70%, tritato
100 g cioccolato al latte, tritato
170 g zucchero di canna
150 g burro 
175 g farina debole
30 g cacao in polvere
4 g bicarbonato
i semi di 1/2 bacca di vaniglia
4 g fior di sale

Nel bicchiere del mixer tritare finemente un terzo dello zucchero di canna, aggiungere il burro freddo e mescolare. Unire la farina, il cacao, il bicarbonato, i semi del baccello di vaniglia, il fior di sale e mescolare ancora. Per ultimo unire  i due tipi di cioccolato tritati grossolanamente. 
Trasferire sul piano di lavoro e lavorare fino ad ottenere un impasto liscio. Formare due cilindri del diametro di 3 cm circa, avvolgere nella pellicola trasparente e fare raffreddare in frigorifero. Una volta che i cilindri saranno ben freddi, tagliarli dei biscotti di due cm di spessore e infornare a 170° C per 10-12 min circa. 
Fare raffreddare su una gratella per biscotti e mangiare freddi, eventualmente cosparsi con qualche altro granello di fior di sale in superficie.

ENGLISH VERSION

100 g grated dark chocolate
100 g grated dairy milk
170 g light brown soft sugar
150 g unsalted butter
175 g plain flour
30 g cocoa powder
4 g bicarbonate of soda
seeds of 1/2 vanilla pod
4 g sea salt flakes

Mix finely 70 g of sugar, then add butter, remaining sugar and mix together. Add the flour, cocoa, baking soda, vanilla seeds and salt flakes, then mix again. Finally add the grated chocolate and mix. 
Pour the dough on a floured work surface and form two 3 cm diameter rolls. Wrap them with cling film and place them in the fridge for 2 hours. 
Preheat the oven to 170° C . Cut the dough rolls into two cm thick slices. Bake them on a tray covered with baking paper for 10-12 minutes. Let cool before eating.

Yogurt greco con bulgur, loti e cioccolato / Greek yogurt with toasted bulgur, sharon fruit and chocolate

Mi sono interrogata per mesi su come spiegare l'ansia a mia figlia. 

Quella stretta improvvisa che a volte chiude la gola e ottunde il cervello eppure, forse, ci mette in relazione con la parte più scoperta di noi stessi. 

Quella che la prende solo ogni tanto e che noi, per darle la dignità di un nome (ma di uno che non faccia troppa paura), chiamiamo affettuosamente ansietta.

Poi un libro della doc Stefania Andreoli, e una rivelazione.

L'ansia non va combattuta, ma accettata.

Perché solo nella percezione dell'assenza la vita trova spazio libero per farsi strada.

E allora ho pensato che l'ansia non gliela posso spiegare, perché ognuno ha la sua e va bene così. Ma forse potevo provare a cantargliela sulle note de Il paradiso dei calzini di Vinicio Capossela, che amiamo entrambe e che in tante sere ci ha fatto compagnia. 

Ci perdonino le persone coinvolte, ma noi ieri sera ci siamo addormentate così.

75 g bulgur
un pizzico di sale
50 g sciroppo d'acero
300 g yogurt greco
100 g loti
30 g cioccolato fondente al 70%
cannella in polvere


Portare a bollore 150 g d'acqua con un pizzico di sale, versare il bulgur e lasciare cuocere finché l'acqua non sarà del tutto assorbita. Fare riposare una decina di minuti, quindi sgranare il bulgur con i rebbi di una forchetta, e fare freddare.


Quando il bulgur si sarà freddato, scaldare un pentolino dal fondo spesso, versarvi lo sciroppo d'acero e cuocere mescolando fino a formare un caramello, aggiungere il bulgur cotto e le spezie, mescolare bene e allontanare dal fuoco.


Fare intiepidire il bulgur, poi aggiungerlo in una bowl con lo yogurt e terminare con fettine di loti e scaglie di cioccolato fondente.

75 g bulgur wheat
a pinch of salt

50 g maple syrup
300 g Greek yogurt
100 g sharon fruit

In a little saucepan, bring 150 g of water to the boil with a pinch of salt, add the bulgur in and cook until the water is completely absorbed. Let it cool for about ten minutes, then fluff with a fork and let it cool completely.


When the bulgur is cool, heat a saucepan, add the maple syrup and cook, stirring until it forms a caramel, add boiled bulgur and cinnamon, mix well and remove from the heat. Let the bulgur cool, then add it into a bowl with the yogurt and finish with sharon fruit slices and dark chocolate.

Biscotti allo zenzero / Ginger snaps

Ho scoperto questi biscotti da poco, con un'amica che è quasi famiglia.
Di quelle con cui è bello andare a cena il venerdì sera, il mercoledì e tutti gli altri giorni della settimana.
Con cui il caffè al parco è un appuntamento fisso, insieme ad un messaggio prima di andare a letto, ché a dividere i pensieri ci si sente più leggeri.

Insieme abbiamo immaginato infiniti banchetti di Natale e weekend che sono solo rimandati. 
Condiviso vestiti di bambini e progetti importanti.
Riso e pianto, spesso all'unisono.

Questa pandemia ci ha tolto molto, come a tutti.
Ma questo non può impedirci di essere grati.
Dei biscotti buoni e delle amiche belle, prima di tutto.


225 g farina
1 cucchiaino cannella in polvere
1 cucchiaino zenzero in polvere
½ cucchiaino bicarbonato
¼ cucchiaino sale
⅛ cucchiaino noce moscata grattugiata
⅛ cucchiaino chiodi di garofano in polvere
110 g burro
170 g zucchero
55 melassa
i semi di ¼ di bacca di vaniglia
1 tuorlo grande

Setacciare insieme tutte le polveri con il sale. Nella ciotola della planetaria mescolare insieme il burro e lo zucchero, poi aggiungere l'uovo, i semi della bacca di vaniglia e la melassa. Mescolare a velocità media finché gli ingredienti non saranno incorporati, poi unire le polveri e amalgamare.

Trasferire l'impasto su un foglio di carta da forno, dividerlo in due e arrotolarlo in cilindri. Avvolgere con pellicola trasparente e fare freddare in freezer.  

Scaldare il forno a 180° C. Rivestire più teglie con carta da forno, affettare sottilmente i rotoli di impasto (quasi) congelati, disporre i biscotti nella teglia lasciando spazio tra di loro. Cuocere per circa 13-15 minuti, poi fare freddare un paio di minuti prima di trasferire su un gratella  e afre freddare completamente.

225 g plain flour
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp baking soda
¼ tsp salt
⅛ tsp ground nutmeg
⅛ tsp ground cloves
110 g unsalted butter, in pieces, room temperature
170 g caster sugar
55 molasses
seeds of ¼ vanilla pod
1 large egg yolk

Sift together all dry ingredients with salt. In a stand mixer combine butter and sugar and mix on medium speed until the batter holds together. Scrape down the sides of the bowl and add egg, vanilla and molasses. Mix on medium speed until incorporated. Add the dry ingredients to the bowl and mix until incorporated.

Transfer the dough on parchment paper, cut in half and roll each half into a log. Wrap the logs in cling film and freeze until firm.

Preheat the oven to 180° C. Line some baking sheets with parchment papers. Unwrap frozen logs and slice them thinly. Place rounds onto prepared baking sheets  with some distance between them and bake until dark brown, about 13-15 minutes. Remove from the oven and let cool for 2 minutes before transferring to a cooling rack.

Torta rovesciata alle arance / Upside down orange cake

Al lento vacillare stanco, ogni giorno mi accingo.

E più e più grava il peso di ieri e l'insonnia di domani,
in questo assurdo stare casalingo
senza il conforto degli affetti lontani.

Finiranno i lunghi giorni reclusi
nell'alveo di una badia adorata
finiranno e li avremo conclusi
con l'arrivo di una primavera agognata.


4 arance di medie dimensioni
260 g zucchero semolato
150 g farina debole
80 g semolino
8 g lievito chimico
1/2 cucchiaino sale 
40 g Cointreau
1/2 cucchiaio di scorza d'arancia finemente grattugiata
i semi di 1/2 bacca di vaniglia
3 uova
280 g olio evo

Preparare la teglia. Ungere con olio d'oliva il fondo e i bordi di una tortiera da 25 cm, coprire il fondo con un cerchio di carta da forno e ungere di nuovo. Con un coltello affilato affettare sottilmente le arance nella parte centrale più larga, lasciando da parte le calotte superiori e inferiori. Trasferire le fette d'arancia nella teglia, sulla carta da forno oleata, avendo cura di sovrapporre le une alle altre. 

Spremere le calotte delle arance avanzate fino ad ottenere due cucchiai di succo. In una ciotola, unire il succo d'arancia a 60 g di zucchero, e mescolare. Trasferire questo impasto umido sulle fette d'arancia, muovendo la teglia per distribuire bene il composto. 

Per la torta. In una ciotola mescolare la farina, il semolino, il lievito e il sale. In un'altra ciotola mescolare il Cointreau, la scorza d'arancia grattugiata e i semi della bacca di vaniglia. Nella ciotola della planetaria sbattere a lungo le uova con i restanti 200 g di zucchero, fino ad ottenere una montata chiara e leggera. Aggiungere l'olio mescolando bene, a velocità sostenuta. Quando l'olio sarà incorporato, aggiungere gli ingredienti secchi e quelli umidi, alternativamente, in più volte, mescolando a bassa velocità. Trasferire l'impasto sulle fette d'arancia, livellare la superficie con una spatola e infornare a 180 °C per 40 min circa. 

Quando la superficie della torta si sarà scurita e il centro sarà asciutto, estrarre la torta dal forno e fare freddare nella teglia per 15 minuti circa. Trascorso questo tempo, sformare la torta su una gratella e lasciare riposare. Quando la torta sarà completamente fredda, avvolgerla nella pellicola trasparente e farla riposare a temperatura ambiente per un giorno almeno prima di servire.


ENGLISH VERSION

4 medium oranges
260 g caster sugar
150 g plain flour
80 g semolina flour
8 g baking powder
1/2 teaspoon salt
40 g Cointreau
1/2 tablespoon finale grated orange zeste
seeds of 1/2 vanilla pod
3 medium eggs
280 g extra virgin olive oil

Prepare the pan. Coat the bottom and sides of a 25 cm round pan with oil, line the bottom with parchment paper and coat the parchment with more oil. Slice thinly the oranges with a sharp knife and squeeze the ends until you have two tablespoons of juice. 

In a bowl, add 60 g of the sugar to the juice and whisk them together. Pour the mixture into the bottom of the oiled pan and spread it across the parchment. Place the orange slices across the bottom of the pan and set aside.


For the cake. In a bowl whisk plain flour, semolina, baking powder and salt. In another bowl stir together Cointreau, orange zest and vanilla seeds.

In a stand mixer whisk the eggs with the 200 g remaining sugar until the mixture is pale and light, then gradually add the oil. When the oil is completely incorporated, add the flour mixture and the wet mixture, alternating them. Pour the batter over the orange slices, smooth the top with a spatula and transfer the pan to the preheated oven. Bake the cake at 180° C for about 40 minutes.

When the top is golden brown and the center is firm to the touch, remove the pan from the oven and let cool for 15 minutes, then invert the cake onto a wire rack, peel away the parchment paper and leave it rest. When the cake is completely cool, wrap it with cling film and leave it at room temperature for 24 hours before eating.

Galette des rois

Arrivo sempre un po’ in ritardo con i bilanci di fine anno.
Sarà che non sento mai forte la cesura tra quello che finisce e quello che comincia.
O che alcune emozioni hanno bisogno di sedimentare più di altre, per diventare ricordi.
O forse che questi 366 lunghi giorni mi hanno insegnato a rispettare i tempi di ciascuno, anche i miei.

Da domani mi dedicherò a qualcos'altro.
 
Darò una lustrata a questo blog, mi occuperò della grafica e dell'interfaccia. 
Lascerò intatte le parole, ché quelle siamo io e la mia pelle e la pelle è difficile da cambiare.
E cercherò di renderlo un posto più facile e comodo per tutti. 

Ma oggi scorro ancora le foto dell'anno trascorso e provo a definirlo.
Un anno goloso e zuccherino, come sempre.
Ma più vivido, più contrastato.
A volte dolorosamente sovraesposto.
E così vero.


Per la pasta sfoglia rapida: 
250 g farina debole
250 g burro freddo, tagliato a cubetti
1 cucchiaino di sale
125 g acqua ghiacciata

Per la crema frangipane:
crema pasticciera
crema alle mandorle

Per la crema pasticciera:
50 g latte intero fresco
10 g tuorli
15 g zucchero semolato
5 g amido di mais
una noce di burro

Per la crema alle mandorle:
50 g burro pomata
50 g zucchero semolato fine
50 g mandorle in polvere
50 g uova
10 g farina 

Per la doratura:
un uovo sbattuto

Per la finitura:
50 g acqua
50 g zucchero

Per la pasta sfoglia. Sul piano di lavoro fare una fontana con la farina, porre al centro burro e sale e incorporare progressivamente la farina lavorando con la punta delle dita. Aggiungere progressivamente l'acqua finché non sarà assorbita per intero, senza lavorare troppo la pasta, avvolgere nella pellicola trasparente e fare riposare in frigorifero per 30 min. Infarinare il piano di lavoro e stendere la pasta in un rettangolo di 40x20 cm. Fare una piega da tre e girare di 90°. Stendere nuovamente la pasta in un rettangolo di 40x20 cm e fare una piega da tre. Avvolgere il panetto nella pellicola trasparente e fare riposare in frigorifero per 30 min. Fare ancora due giri da tre alla pasta fredda, stendendola e ripiegandola come prima, per un totale di quattro giri. Avvolgere nella pellicola trasparente e fare riposare almeno 30 min in frigorifero prima di utilizzarla. 

Per la crema pasticciera. Portare a bollore il latte. Sbattere i tuorli con lo zucchero, quindi aggiungere l'amido di mais e mescolare. Quando il latte avrà raggiunto il bollore, versare sui tuorli e mescolare bene. Riportare il composto sul fuoco, sempre mescolando, finché la crema sarà cotta. Trasferire la crema in una ciotola, passare  la noce di burro sulla superficie della crema, coprire con pellicola trasparente e fare freddare.

Per la crema alle mandorle. Lavorare il burro pomata e lo zucchero con una spatola, quindi aggiungere le mandorle in polvere, l'uovo e la farina. Mescolare bene, fino ad ottenere una crema liscia. 

Per il frangipane. Mescolare la crema pasticciera con una frusta, per farle riprendere la giusta consistenza. Aggiungere la crema di mandorle e mescolare bene. Trasferire il frangipane in una sac à poche. 
 
Per l'assemblaggio. Quando la pasta sfoglia avrà riposato, stenderla ad uno spessore di 3 mm e farla riposare in frigorifero per 30 min. Ricavare dalla sfoglia 2 dischi da 26 cm di diametro, tagliandola con un anello da pasticceria. Spennellare con l'uovo sbattuto la parte esterna di un cm circa di uno dei due cerchi di pasta. Con la sac à poche dressare la crema sulla sfoglia con il bordo spennellato d'uovo, stando attenti a non superare il limite della parte spennellata e inserire una figurina di porcellana nella crema. Coprire la crema con il secondo disco di sfoglia, premendo sui bordi per sigillarli, facendo attenzione a non incorporare aria. Coprire con un foglio di carta da forno e una teglia sulla galette, e capovolgerla. Decorare il bordo pizzicandolo con le dita o con un coltello, spennellare con l'uovo e fare freddare in frigorifero. Quando la galette sarà fredda, spennellare nuovamente la superficie con l'uovo, rigare la superficie con la parte posteriore di un coltello e infornare a 180° C per 35-40 min ca.  

Per la finitura. Mentre la galette termina la cottura, portare sul fuoco un pentolino con l'acqua e lo zucchero, e allontanare dal fuoco una volta raggiunto il bollore. Sfornare la galette e spennellare subito la superficie con lo sciroppo.

For rough puff pastry:
250 g plain flour
250 g very cold butter, cut into small cubes
1 tsp salt
125 g ice-cold water

For frangipane cream:
custard
almond cream

For custard:
50 g fresh whole milk
10 g egg yolks
15 g caster sugar
5 g corn starch
a knob of butter

For almond cream:
50 g butter at room temperature
50 g fine granulated sugar
50 g ground almonds
50 g eggs
10 g flour

For the browning:
a beaten egg

For finishing:
50 g water
50 g sugar

For the puff pastry. On the worktop heap the flour in a mound and make a well. Put in the butter and the salt and work them together with the fingertips, gradually drawing the flour into the center. When the dough is grainy and the butter cubes have become small pieces, gradually add the iced water and mix until it is all incorporated, but don't overwork the dough. Wrap it in cling film and refrigerate for 30 min. Flour the worktop and roll out the puff pastry to a 40x20 cm rectangle. Fold it into three and give it a quarter-turn. Again roll out the puff pastry to a 40x20 cm rectangle and fold it into three. Wrap the block in cling film and refrigerate it for 30 minutes. Give the chilled pastry another two turns, rolling and folding as before. In total you have 4 turns and the pastry is ready. Wrap the block in cling film and refrigerate it for at least 30 minutes before using.

For the custard. Put the milk in a saucepan and bring to the boil. Meanwhile, whisk the egg yolks with the sugar in a bowl, then add the cornstarch and whisk again. Pour the boiling milk on the egg yolks, whisking continuously, then pour the mixture back into the saucepan. Cook over the heat, stirring constantly, until the cream is cooked. Transfer the cream to a bowl, pass the knob of butter on the surface of the custard, cover with cling film and leave to cool.

For the almond cream. In a bowl, work the butter whit a whisk until creamy. Still whisking, add sugar, then ground almonds, egg and flour. Mix well, until you get a smooth light cream.

For the frangipane. Whisk the custard to get it back to a creamy consistency. Add the almond cream and whisk again. Transfer the frangipane to a piping bag.
 
For assembly. When the puff pastry has rested, roll it out to a thickness of 3 mm and leave it rest in the refrigerator for 30 min. With a pastry ring cut 2 discs 26 cm in diameter from the pastry. Brush the outer part of one circle with the beaten egg. With the piping bag, dress the cream on the pastry with the edge egg brushed, being careful not to exceed the limit of the brushed part and insert a porcelain figurine in the cream. Cover the cream with the second pastry disc, pressing on the edges to seal them, being careful not to incorporate air. Pour a sheet of baking paper and a pan over the galette, and turn it upside down. Decorate the edge by pinching it with your fingers or a knife, brush with egg and leave to cool in the refrigerator. Torta vegana e gluten free al cioccolato e mirtilli - Blueberry gluten free vegan chocolate cake

Pazienza.

Appellarsi al bello che c'è sempre, che c'è comunque, che c'è nonostante tutto.
Non smettere di nutrire speranze e progetti.
Cucinare sempre, scrivere di più.

Lunedì mattina.
Ricomincio da qui.


Per la torta:
160 g cioccolato fondente 
120 g margarina
240 g apple sauce o composta di mele
125 g farina di grano saraceno
180 g zucchero semolato
i semi di 1/2 baccello di vaniglia
un pizzico di sale 

Per la finitura:
cacao in polvere
mirtilli

Riscaldare il forno a 200° C.
In una ciotola fondere insieme la margarina e il cioccolato fondente, e scioglierli insieme al microonde. Aggiungere la salsa di mele, e incorporare bene, poi unire gli ingredienti restanti, sempre mescolando con una frusta. Ungere una teglia con lo spray staccante e versarvi l'impasto. Infornare fino a cottura ultimata, per ca 18-20 minuti. Fare freddare la torta completamente, quindi spolverare con cacao in polvere e terminare con mirtilli.


ENGLISH VERSION

For the cake:
160 g dark chocolate
120 g vegan butter
240 g apple sauce
125 g spelt flour
180 g caster sugar
the seeds of 1/2 a vanilla pod

For the finishing:
cocoa powder

Preheat the oven to 200° C. 
Put the dark chocolate and the vegan butter in a bowl and melt them together in the microwave. Add apple sauce, then spelt flour, sugar, vanilla seeds and salt and mix with a whisk. Grease a round pan with a non stick pan spray and spread the batter into it. Bake until firm, for around 18-20 mins. 
Let the cake cool completely, dust with cocoa powder and decorate with fresh blueberries.
Your cake is now ready, enjoy it.

Pancakes

Le colazioni della domenica sono diventate quelle del lunedì, del martedì, e di tutti gli altri giorni.
Poco importa se dovremo correre di più per recuperare tempo sulla tabella di marcia e punti sulla bilancia.
Poco importa se costa disordine e fatica.

Tempo e sorrisi sono beni tesori preziosi.
E se possiamo goderne siamo ricchi, ma ricchi davvero.


160 g yogurt greco
2 uova
i semi di 1/2 bacca di vaniglia
100 g farina debole
2 cucchiaini lievito per dolci
80 g latte 
2 cucchiai zucchero
1 presa sale

In una ciotola unire lo yogurt, le uova e i semi della bacca di vaniglia mescolando con i rebbi di una forchetta. Setacciare insieme la farina con il lievito e aggiungere al composto di uova, poi unire tutti gli altri ingredienti fino ad ottenere una pastella liscia e omogenea.
Versare la pastella in una pentola antiaderente già calda, due o tre cucchiai per volta, eventualmente aiutandosi con una noce di burro, e cuocere a fuoco medio un paio di minuti. Quando sulla superficie compaiono le prime bolle e i bordi cominceranno ad asciugarsi, girare il pancake e cuocere dall'altro lato, un paio di minuti o finché la superficie non sarà dorata. Servire i pancakes caldi o freddi, con mirtilli, foglioline di menta o sciroppo d'acero, con crema di nocciole, frutta fresca e zucchero a velo, miele o confettura.  

ENGLISH VERSION

160 g Greek yogurt
2 free range medium eggs
the seeds of 1/2 vanilla pod
100 g plain flour
2 teaspoons baking powder
80 g milk
2 tablespoons caster sugar
1 pinch of salt 

In a bowl whisk together yogurt, eggs and vanilla seeds, mixing with a fork. Sift together the flour with the baking powder, add them to the egg-yogurt mixture, then combine all the other ingredients until smooth. 

Heat a non stick-pan over medium heat, eventually brush it lightly with butter. Pour the batter onto the pan, two or three tablespoon at a time, and cook for 2 to 3 minutes, until bubbles appear on top and edges are slightly dry. Flip and cook until golden brown on underside, about two or three minutes more. Repeat with remaining batter. Serve the pancakes warm or cold, topped with blueberries, mint leaves and maple syrup, with hazelnut cream, fresh fruit and icing sugar, honey or jam.

Crostatine alle mandorle, crema leggera al mascarpone e lamponi

Il fieno è falciato, 
l'autunno è inaugurato,
così diceva il genio di Gianni Rodari.

E lo so che ogni stagione ha la sue malie, 
che senza marroni non ci sarebbe Mont-blanc, 
che la zucca in agrodolce è una benedizione dal cielo 
e che le zuppe con l'olio buono sono incredibilmente sexy.

Ma nelle mie vene scorre il sole cocente di Sicilia, 
e sono meteropatica.

Le giornate corte mi tolgono brio, 
i colori caldi non sono nella mia palette
e col gelato ho una storia d'amore che dura da un po'. 

Il freddo mi inumidisce i pensieri,
poca luce mi rabbuia i sentimenti. 

Tempererò una mina buona, aspettando l’estate.


Per la pâte sucrée:
52 g burro
25 g uova
87 g zucchero a velo
30 g farina di mandorle
2.5 g fior di sale
60 g farina debole
170 g farina debole

Per la crema frangipane alle mandorle:
50 g burro a pomata
50 g zucchero
100 g mandorle in polvere
50 g uova
10 g farina debole

Per la composta di lamponi:
150 g lamponi
45 g zucchero

Per la crema leggera allo yogurt e mascarpone:
100 g yogurt greco
100 g mascarpone
100 g panna liquida
60 g zucchero a velo

Per terminare:
lamponi

Per la pâte sucrée. Unire nella planetaria con la foglia il burro a 22-25° C con lo zucchero a velo, le uova e il sale, poi aggiungere la farina di mandorle e la prima quantità di farina. Amalgamare bene, quindi finire unendo velocemente la seconda quantità di farina. Fare freddare la pasta in frigorifero per almeno una notte, stendere ad un'altezza di 3 mm e ricavarne i dischi del diametro dello stampo e delle bande rettangolari. Fare riposare in frigorifero, quindi imburrare i bordi dei cerchi microforati, fare aderire le bande rettangolari e inserire i dischi centrali. Fare freddare in congelatore, poi infornare a 160° C fino a colorazione, per 10-12 min ca. Fare freddare qualche istante negli stampi prima di sformare.

Per la crema frangipane alle mandorle. Mettere il burro a pomata in una boule e lavorarlo insieme allo zucchero con una spatola. Aggiungere gli ingredienti restanti continuando a mescolarli con la spatola, fino ad ottenere una crema liscia.

Per la composta di lamponi. Versare i lamponi e lo zucchero in un pentolino e cuocerli a fuoco basso, mescolando spesso, per circa 15-20 min. Quando la frutta si sarà ridotta e la composta avrà raggiunto un aspetto gelatinoso, trasferire in una ciotola, coprire con pellicola a contatto e portare a temperatura ambiente.

Per la crema leggera allo yogurt e mascarpone. Trasferire tutto gli ingredienti nella ciotola della planetaria e montare fino ad ottenere una crema sostenuta.

Per montare. Fare freddare i gusci di pâte sucrée. Dressare all'interno la crema frangipane alle mandorle, poi la composta di lamponi e infine la crema leggera allo yogurt e mascarpone, con uno spessore di circa 3 millimetri per strato. Terminare con i lamponi freschi ed eventualmente spolverare con zucchero a velo.

For the pâte sucrée. Into the bowl of a stand mixer, mix the butter at 22-25° C with the icing sugar, the eggs and the salt, then add the grounds almond and the first quantity of flour. Mix well, then finish by quickly adding the second amount of flour. Leave the pastry to cool in the refrigerator for at least one night, roll out to a height of 3 mm and cut out the discs of the diameter of the mold and rectangular bands. Leave to rest in the refrigerator, then grease the edges of the micro-perforated circles, make the rectangular bands adhere and insert the central discs. Refrigerate in the freezer, then bake at 160° C until color, for 10-12 min approx. Leave to cool a few moments in the molds before unmolding.

For the almond frangipane. Put the soft butter in a bowl with the sugar and mix with a spatula. Add the remaining ingredients while continuing to mix, until you get a smooth cream.

For the raspberry compote. Put raspberries and caster sugar into a saucepan and cook over low heat, stirring often, for about 15-20 min. When the fruit has reduced and the compote has reached a gelatinous aspect, transfer to a bowl, cover with cling film and bring to room temperature.

For the light yogurt and mascarpone cream. Put all the ingredients into the mixer bowl and whisk until obtain a firm cream.

To mount. Allow the pâte sucrée shells to cool. Dress the almond frangipane cream inside, then the raspberry compote and finally the light yogurt and mascarpone cream, with a thickness of about 3 mm per layer. Finish with fresh raspberries and sprinkle with icing sugar if you like.

Ciambelline vegane al tè matcha / Matcha vegan donuts

Ho sempre indossato lenti, negli ultimi trent'anni.
A schermare la luce.
A proteggere i sentimenti.
A tenere le distanze.

Le ho indossate quando c'era e quando non ce n'era bisogno.
Come un vezzo.
Come una difesa.
Come una seconda pelle, io che ho sempre fatto difetto della prima.

Le ho messe via, adesso, e non penso che vorrò riprenderle.
Basta più, direbbe mio figlio.
È ora di andare avanti, dico io.

Sono pronta per osservare il mondo.
Speriamo che non faccia troppo male, e che sia lieve.


Per le ciambelle:
190 g farina debole 
150 g zucchero semolato 
10 g tè matcha
8 g baking powder
2 g sale
180 g latte di riso/soia
40 g yogurt di soia
50 g olio di cocco, sciolto, a temperatura ambiente

Per la glassa:
140 g zucchero a velo setacciato
30 g latte di riso/soia 
15 g olio di cocco, sciolto

Per terminare:
petali di rosa essiccati

Per le ciambelle  Setacciare insieme la farina con il bicarbonato, il sale e il tè matcha, aggiungere lo zucchero e mescolare. A parte miscelare il latte con lo yogurt e l'olio di cocco, quindi aggiungere gli ingredienti secchi, mescolando con una spatola. Trasferire il composto in una sac à poche e dressare nello stampo a forma di ciambelle. Infornare a 180° C per 12-15 min ca. Fare freddare le ciambelle nello stampo e passarle in freezer prima di sformarle. 

Per la glassa. Mescolare tutti gli ingredienti in una ciotola, immergervi dentro le ciambelle, finire con i petali di rosa essiccati e fare asciugare su una gratella per dolci.

ENGLISH VERSION

For the donuts:
190 g plain flour
150 g caster sugar
10 g matcha powder
8 g baking powder
a pinch of sea salt
180 g soy milk
40 g unsweetened soy yogurt 
50 g melted coconut oil, at room temperature

For the glaze:
140 g icing sugar, sifted
30 g soy milk
15 g melted coconut oil

For finishing: 
dried rose petals

For the donuts. Sift together the flour, baking powder, matcha and salt into a mixing bowl, add the sugar and whisk to combine them. Add the soy milk, soy yogurt and melted coconut oil and whisk with a spatula to combine. Transfer the donut batter into a piping bag and pipe it into the donut mould. Bake for 12-15 minutes at 180° C until lightly browned on top. Remove the mould from the oven and let cool in the freezer before transferring the donuts to a wire cooling rack. Glaze them when completely cold.
For the glaze, combine all the ingredients in a mixing bowl. Dip the donuts into the glaze and then place them onto a parchment lined baking tray. Decorate with toppings.

Cestini di meringhe alle prugne e timo / Meringues nests with plums and thyme

Ci sono amori che non finiscono.
Forse perché non sono nati, non si usurano mai.
Rimangono ipertricotici e spensierati anche quando noi non lo siamo più.

Hanno occhi immensi, melodie d'estate e un profumo che potresti raccontare.
Si nutrono di ricordi, ma non sono per niente tristi.

Non conoscono la noia della sera e la fatica della mattina.
La pioggia senza poesia e l'umidità negli occhi. 
Le voci roche e i pensieri stanchi. 

Sono sfrontati e impudenti, abbronzati e prepotenti.
Hanno dentro tutte possibilità.
E sono perfetti così.
 

Per la meringa francese:
150 g albumi a temperatura ambiente
150 g zucchero semolato
150 g zucchero a velo

Per la composta veloce di prugne al timo:
10 prugne
2 cucchiai di zucchero semolato (o meno o più, a seconda della dolcezza delle prugne)
un ciuffetto di timo

Per la finitura:
dischi di pan di Spagna al cacao o chiffon cake al cacao, io ho usato questa qui
prugne
timo
gelatina neutra

Per la meringhe. Versare gli albumi a temperatura nella ciotola della planetaria e cominciare a montare a bassa velocità incorporando poco alla volta lo zucchero semolato e aumentando gradatamente la velocità delle fruste. Quando la meringa sarà montata, aggiungere delicatamente lo zucchero a velo setacciato aiutandosi con una spatola. Versare in un sac à poche con bocchetta a stella e formare su una placca foderata di carta da forno dei cestini di meringhe del diametro di otto cm circa. Infornare a 110°C per 50 minuti circa, a seconda della dimensione delle meringhe. Fare freddare.

Per la composta veloce di prugne al timo. Lavare le prugne, pelarle, denocciolarle, tagliarle a pezzi e metterle in un pentolino insieme allo zucchero e le foglioline di timo. Portarle sul fuoco e cuocerle per 10 min circa, finché la frutta si sarà disfatta e avrà raggiunto una consistenza gelatinosa. Fare freddare.

Per la finitura. Tagliare un paio di fette di chiffon cake alte mezzo cm e con un coppapasta ricavarne dei dischi di un paio di cm di diametro. Posizionare i dischi di chiffon cake all'interno dei nidi di meringa e coprirli con un cucchiaino di composta fredda di prugne al timo. Terminare con le prugne tagliate a fettine o a cubetti, nappare con gelatina neutra e finire con qualche fogliolina di timo fresca.

ENGLISH VERSION

For the French meringue: 
150 g egg whites at room temperature 
150 g granulated sugar 
150 g powdered sugar 

For the quick compote of plums with thyme: 
10 plums 
2 tbsp of caster sugar (or less or more, depending on the sweetness of the plums) 
a thyme sprig

For the finishing: 
2 cm disks of cocoa sponge cake or cocoa chiffon cake, I have used some cut from this one

For the meringues. Pour the egg whites into the bowl of the stand mixer and start whisking at low speed, gradually incorporating the granulated sugar and gradually increasing the speed of the whisk. For the quick compote of plums with thyme. 
Wash the plums, peel them, pit them, cut them into pieces and put them in a saucepan with the caster sugar and the thyme leaves. Bring them to the heat and cook for about 10 minutes, until the fruit has dissolved and has reached a gelatinous consistency. Make it cool. 

For finishing. Cut a couple of slices of chiffon cake half a cm high and with a pastry cutter make discs of a couple of cm in diameter. Place the chiffon cake discs inside the meringue nests and cover them with a teaspoon of cold compote of plums with thyme. Finish with the plums cut into slices or cubes, sprinkle with neutral gelatin and finish with some fresh thyme leaves.

Dacquoise alle nocciole e ganache al cioccolato - Hazelnut dacquoise with dark chocolate ganache

Quarant’anni.
Davvero?
Ma quando sono passati?

Forse nelle notti a sperare che lei stesse bene, o in quelle a scrivere a studiare.
Nelle paure più nere e nelle chiacchiere con le amiche.
Nelle ninne nanne e nelle promesse d’amore.

Saranno trascorsi tutte le volte che ho sbagliato, tante, e ogni volta che ho avuto un rimpianto. 
Nelle scommesse vinte e in quelle perse.
Quando tutto appariva confuso e quando poi, all’improvviso, si è rischiarato il cielo intorno.

Sono quasi certa che il tempo non sia trascorso a tavola, ma se così fosse… ben venga quello che c’e ancora da passare. 

Dicono che a quarant’anni ognuno abbia la faccia che gli ha dato la vita.
Non so se sia vero e se mi sono meritata tutto l’amore, la pazienza, il perdono e anche questa faccia asimmetrica che oggi mi piace. 
Ma cammino a testa alta e non abbasso più gli occhi.
Benedetti quarant’anni, e quando sono passati.

Per la dacquoise alle nocciole:
200 g albumi
125 g zucchero
190 g farina di nocciole
140 g zucchero
50 g farina di riso
Per la ganache al cioccolato:
250 g cioccolato fondente 70%
1,2 l acqua
200 g zucchero
200 g burro a temperatura ambiente
100 g tuorli
30 g cacao amaro in polvere
i semi di mezzo baccello di vaniglia

Per la finitura:
nocciole tostate e tritate grossolanamente
grue di cacao


Per la dacquoise. Montare gli albumi con i 125 grammi di zucchero, poi unire la farina di nocciole miscelata allo zucchero restante e alle farine. Disegnare tre cerchi da 18 cm su due fogli di carta da forno. Trasferire il composto in una sac à poche con una bocchetta liscia e dressare la meringa sui cerchi disegnati. Spatolare la superficie fino a renderla liscia, cuocere in forno a 150° C per 90 min circa, sfornare e fare freddare appena prima di eliminare la carta da forno. Fare freddare completamente.

Per la ganache al cioccolato. Fondere il cioccolato e farlo freddare, mescolandolo di tanto in tanto. Portare a bollore l'acqua con lo zucchero fino a raggiungere i 121° C. Quando lo sciroppo avrà raggiunto i 115° C, azionare la planetaria e montare i tuorli finché saranno bianchi e spumosi. Quando la temperatura avrà raggiunto 121° C, versare lo sciroppo a filo suoi tuorli montati e mescolare con la planetaria finché il composto sarà completamente raffreddato. Trasferire il burro in una ciotola e lavoralo con una spatola insieme ai semi di mezzo baccello di vaniglia fino a raggiungere la consistenza di una crema. Unire il burro nella ciotola della planetaria in movimento, poco alla volta, fino ad avere un composto cremoso. Una volta terminato il burro, aggiungere il cioccolato tiepido, poi il cacao setacciato, mescolando con una spatola. Trasferire la ganache in una sac à poche.

Disporre il primo disco di dacquoise sul piatto da portata, farcire con un terzo della ganache al cioccolato dressandola con il sac à poche e distribuire il gru di cacao sopra la ganache. Ripetere con gli altri dischi di dacquoise e terminare con le nocciole tostate.


ENGLISH VERSION

For the hazelnut dacquoise:
200 g egg whites
125 g caster sugar
190 g hazelnut flour
140 g caster sugar
50 g rice flour

For the chocolate ganache:
250 g 70% dark chocolate
1.2 l water
200 g caster sugar
200 g butter at room temperature
100 g egg yolks
30 g unsweetened cocoa powder
the seeds of half a vanilla pod

For the finishing:
toasted and coarsely chopped hazelnuts
cocoa grue

For the dacquoise. In the bowl of a stand mixer, whisk the egg whites with the 125 grams of sugar, then add the hazelnut flour mixed with the remaining sugar and flour. With a pencil, draw three 18 cm circles on two sheets of baking paper. Transfer the mixture into a pastry bag with a 1 cm smooth nozzle and dress the meringue on the drawn circles. Spatulate the surface until smooth, bake in the oven at 150° C for about 90 min, remove from the oven and cool a little just before removing the parchment paper. Allow to cool completely.

For the chocolate ganache. Melt the chocolate and let it cool, mixing it from time to time. Bring the water and sugar to boil until it reaches 121° C. When the syrup has reached 115° C, turn the stand mixer on and whisk the egg yolks until they are white and fluffy. When the temperature has reached 121° C, put the syrup into the whipped egg yolks and whisk until the mixture is completely cooled. Transfer the butter to a bowl and work it with a spatula together with the seeds of half a vanilla pod until it reaches the consistency of a cream. Add the butter in the bowl of the stand mixer in motion, a little at a time, until you have a creamy mixture. Once the butter is finished, add the warm chocolate, then the sifted cocoa, stirring with a spatula. Transfer the ganache to a pastry bag.

Place the first circle of dacquoise on a serving dish, spread a third of the chocolate ganache dressing it with the pastry bag and distribute the cocoa grue over the ganache. Repeat with the other discs of dacquoise and finish with the chopped toasted hazelnuts.

Girelle - Chocolate rolls

L'estate tarda a sbocciare. 
Luglio non si riconosce.

Questo martedì, invece, sembra esattamente quello che è.
Un giorno senza personalità e buoni propositi, costruito per difetto, non per virtù.
Senza appuntamenti fissi né vie di fuga. 
Senza pretese né troppa luce.
Un giorno senza. 

Una tazza di tè a scaldarsi i pensieri.
E una girella, che fa bene al cuore.



Per il biscuit:
5 uova
180 g zucchero
140 g farina debole
15 g cacao
1/2 bacca di vaniglia

Per la crema alle nocciole:
80 g nocciole pelate
100 g di cioccolato fondente tritato
1 cucchiaio di zucchero a velo
1 cucchiaio di cacao amaro
1 cucchiaio di olio di nocciole
i semi di mezzo baccello di vaniglia

Per la finitura:
100 g cioccolato fondente temperato a 30° C


Per la crema spalmabile alle nocciole. Tostare le nocciole pelate in forno caldo, a 160° C per 12 min circa e farle freddare. Versare le nocciole tostate nel bicchiere del cutter insieme agli altri ingredienti e tritare a lungo, pulendo spesso i bordi del bicchiere per raccogliere il composto. Ci vorranno circa dieci minuti di lavoro paziente per ottenere una crema liscia.

Per il biscuit. Versare le uova nella ciotola della planetaria con lo zucchero e i semi della mezza bacca di vaniglia e montare bene. Quando il composto sarà sostenuto e spumoso, aggiungere la farina setacciata, mescolando con una spatola. Pesare l'impasto e dividerlo in due parti uguali. Aggiungere a una delle due pesate il cacao amaro setacciato e mescolare con una spatola. Foderare una teglia con carta da forno, versare sopra il composto al cacao livellando la superficie con una spatola per ottenere uno spessore uniforme e infornare a 180° C per 5 minuti. Estrarre la teglia dal forno, versare il composto bianco su quello al cacao avendo cura di livellarne la superficie con una spatola e infornare nuovamente per circa 8-10 minuti, finché il composto non sarà dorato. Pareggiare i lati del rettangolo eliminando gli eccessi con una lama affilata, quindi girare il biscuit su un torcione pulito. Eliminare la carta da forno, arrotolare il biscuit sul torcione avvolgendolo dal lato più lungo e fare raffreddare. Aprire il rotolo con delicatezza, avendo cura di mantenere il lato scuro del biscuit sotto quello chiaro, quindi spalmare la crema alle nocciole su tutto il biscuit. Arrotolare nuovamente il biscuit e avvolgerlo nella pellicola alimentare, stringendola bene. Fare freddare in frigorifero per almeno un paio d'ore, così che il rotolo acquisti la forma e la mantenga. Tirare fuori dal frigorifero, tagliare delle girelle dello spessore di circa tre centimetri e portarle a temperatura ambiente.

Per il cioccolato temperato. Tritare il cioccolato fondente. Farne sciogliere 2/3 al microonde, mescolando spesso, fino a raggiungere una temperatura di 45-50° C, quindi aggiungere il terzo restante, sempre mescolando, fino a raggiungere la temperatura di 30-31° C. 

Per la finitura. Prendere una girella alla volta, immergerne una faccia nel cioccolato temperato, e trasferire su una gratella a faccia in giù finché il cioccolato non sarà solidificato. Fare freddare in frigorifero, consumare a temperatura ambiente.


ENGLISH VERSION

For the biscuit:
5 free range medium eggs
180 g caster sugar
140 g plain flour
15 g cocoa powder
1/2 vanilla pod seeds

For the hazelnut cream:
80 g blanched hazelnut 
100 g chopped dark chocolate
1 tablespoon icing sugar
1 tablespoon cocoa powder
1 tablespoon hazelnut oil
1/2 vanilla pod seeds

For the finishing:
100 g tempered dark chocolate, at 30° C


For the biscuit. In the bowl of a stand mixer, whisk the eggs with sugar and vanilla seed at lenght, then add sifted flour mixing with a spatula. Weigh the mixture and split it in two equal parts, then add the sifted cocoa powder to one of them, mixing with a spatula. Line a oven tray with parchment paper, pour the cocoa mixture onto it, leveling the surface with a spatula and bake at 180° C for 5 minutes. Remove the tray from the oven, pour the white mixture over the dark one leveling the surface with a spatula and bake again for 8-10 minutes, until brown. Level the sides of the cake with a sharp blade to obtain a perfect rectangle, then turn the cake on a clean kitchen towel. Remove the parchment paper, roll the biscuit on the twist by wrapping it on the longer side and allow to cool. Open the roll gently, keeping the dark side of the biscuit under the white one, then spread the hazelnut cream on the whole biscuit. Roll the biscuit again and wrap it in plastic wrap, tightening it well. Leave to cool in the refrigerator for a couple of hours, so that the roll can acquire the shape and keeps it. Remove from the refrigerator, cut slices of about three centimeters and bring them to room temperature.

For the tempered dark chocolate. Chop 2/3 of the chocolate and melt it in a microwave until it reaches a temperature of 45-50° C, then add the remaining chocolate and stir. The chocolate is ready when it reaches a temperature of 30-31° C. 

For the finishing. Dip the rolls into tempered chocolate, one at a time, and trasfer them onto a wire rack, with face down until the chocolate has solidified. Leave to cool in te refrigerator, eat at room temperature.
